Im a baker and I do this method all the time to keep my products as fresh as possible whole also not stressing myself out. They can last up to 6-8 months in the freezer if stored correctly

I worked at a huge bakery and this is how we made all the cookies. When you needed to bake some, you'd just go into the freezer and grab the number of trays you needed and bake them off straight from frozen.

It's an awesome hack tbh

This is the best method and I always have perfect chocolate chip cookies waiting in my freezer. And you can have one or 2 and be done instead of eating a lot so you don’t waste them.

I make oatmeal cookies and I freeze them as spheres. When I bake them they flatten out but still stay a little lifted in the middle. It makes the perfect soft on the inside, crispy on the outside oatmeal cookie. So dependent on the cookie you might not even want to bother pre flattening them.

I do this right before the holidays kick off. It makes cookie boxes and bringing Treat to holiday parties so much easier. I also label mine with the temp and bake time so I don't have to go find the recipe.

This is my Christmas gift to my dad every year, he’s diabetic and loves my cookies. This way he can throw one in the toaster oven every few days instead of feeling bad about wasting them

You can also just put the raw dough into a plastic baggie and smoosh it flat and either break off a chunk when you want to bake one, or pull out the whole frozen dough "paving stone" and use a chef knife to cut it into the right number of pieces. I like your idea, too. It just depends on which side of the equation you don't mind spending prep time. :)
