Chocolate cake from my childhood by @fehmz
Ingredients:
250ml hot water
85ml dark cocoa
1/2 tsp instant coffee
5 eggs
2 tsp vanilla
1.25 cups castor sugar (1 & quarter)
125ml oil
2 cups flour
5 tsp baking powder (25ml)
To decorate:
Buttercream
Salted caramel
Sprinkles
Chocolate ganache
Fresh cream
Method:
Set your oven to 175deg C.
In a small jug add:
250ml hot water
1/3 cup (85ml) dark cocoa
1/2 tsp instant coffee
Mix and set aside
In your stand mixer bowl add:
5 eggs
1 tsp vanilla extract
1 & 1/4 cup castor sugar
Whisk on medium high until light and fluffy.
Once fluffy, slowly pour in 125ml oil while it’s whisking on low. Turn up to a medium speed to incorporate completely.
Sift your flour and baking powder together. Alternate into your stand mixer in 3 batches with the cocoa water, whisk until just combined.
Pour into a greased cupcake pan lined with black cupcake liners. Add 1/3-1/2 cup of batter into each. Makes about 24-36 cupcakes depending on your cupcake pan size and how much you fill.
Bake for 8-10 minutes.
Remove and let cool completely.
Decorate as desired.
p.s. I got this huge muffin/cupcake pan from @lazeezas @upcycledcafe it’s by WiltonCakes but not sure if they stock it anymore.
You can also find it at Yuppiechef. It will not fit into a standard 60cm oven
