Chikuzen-boiled Chicken and New Ginger
【material】
1 chicken thigh
100g fresh ginger
2 shiitake mushrooms
3 green beans
New burdock root 50g
50g carrots
1 tablespoon sesame oil
3 tbsp water
2 tablespoons sake
2 tablespoons mirin
1 and 1/2 tablespoons soy sauce
1 tablespoon honey
[How to make]
Peel the ginger root, cut into thin slices and soak in hot water for 15 minutes. Cut the carrots and new burdock into chunks and boil them in water. Cut the shiitake mushrooms into 4 equal parts, remove the stem from the green beans and cut them into 3 equal parts. Heat the sesame oil in a frying pan and grill the chicken cut into bite-sized pieces. Add the root vegetables, ginger, and shiitake mushrooms, add water, soy sauce, sake, and mirin, and simmer for 10 minutes with aluminum foil. After that, green beans and honey are added and it is completed over the fire.

鶏肉と新ショウガの筑前煮
【材料】
鶏もも肉 1枚
新生姜 100g
しいたけ 2枚
インゲン 3本
新ごぼう 50g
ニンジン 50g
ごま油 大さじ1
水 大さじ3
酒 大さじ2
みりん 大さじ2
醤油 大さじ1と1/2
はちみつ 大さじ1
【作り方】
新生姜の皮を剥き、薄切りにしてお湯に15分漬ける。人参、新ゴボウは乱切りにして水から茹でておく。しいたけは4等分に、インゲンはヘタを取り、3等分にカット。フライパンにごま油を熱し、一口大に切った鶏肉を皮目から焼きます。根菜、生姜、しいたけを加え、水、醤油、酒、みりんを加え、落としアルミで10分煮ます。その後、インゲン、はちみつを加え火にかけ完成です。
