A healthy and tasty clear chickenpox for this ramadan.



chicken stock

1/2 Tbspn butter
1/2 onion med size
1/4 inch ginger
1 Bay leaf
2 cloves
4 Peppercorns
200 gm chicken bones
1 tspn celery stems
1/4 small carrot
500 ml water
1 tson lemon juice or vinegar added to remove scum or foam

pan.plus all ingredients excluding chicken. saute for two -three minutes on medium flame. now add chicken bones saute for 7-10 minutes toll it turns brown. After this put water place lid bring to boil. Once it comes to boil open it and let it simmer on.low flame for 30 minutes. remove foam or scum which comes on top . cook it open as if u cover it ,it will be very cloudy. After 30 minutes strain the mixture. shred chicken means seperate chicken from bones when it is hot.
set it aside.
1/2 Tspn oil
1/4 Tbspn butter
1 green Cardamom
1/4 Tspn cumin seeds
1/2 onion finely chopped
1/2 green chilli
1/8 tspn Turmeric
pinch of kashmiri red chilli powder

saute above ingredients till onion turns brown. if u feel spiced are about to burn then add little I.e 2 tbspn stock.
Once onion turns brown add 2 cups prepared stock.3 Tbspn or 1/4 cup.maxim7m shredded chicken.
1/2 Tbspn cilantro stems chopped
2 tbspn corriander leaves or cilantro
let it simmer 8-10 minutes.

switch off serve hot. garnish with cilantro if u wish.
