Letâs make some Vegan Vermicelli Kheer or also know as Payasam in South India. This is one of my favourite Indian desserts and itâs also super easy to make.
Ingredients:
2Â teaspoons oil
2 tablespoons raw cashew pieces
2 tablespoons golden raisins
2 tablespoon chopped almonds
seeds from 1 green cardamom
3/4 cup roasted vermicelli or plain vermicelli broken into 4 to 5 inch pieces
2 cups non dairy milk (Iâve used soy and oat)
2 to 3 tablespoons coconut sugar or regular sugar
6 strands of saffron
1.In a pan, heat some oil. Add the raw cashews and fry until golden brown. Remove from pan.
2. Add the roasted vermicelli in the same pan and fry for a few minutes. If using unroasted then fry until golden brown.
3. Add the plant milk and stir for a few minutes. Then add the ground cardamom. Bring to a boil for a few minutes.
4. Add the roasted cashews, almonds, raisins, sugar and saffron. Stir and let it boil till the vermicelli becomes double in size. It soaked up all the liquid and becomes soft.
5. Serve with some more dry fruits.
