Ingredients:
- 200g paneer (Indian cottage cheese), sliced
- 8 slices of bread (white or whole wheat)
- 1 small onion, thinly sliced
- 1 small bell pepper (capsicum), thinly sliced
- 2-3 tablespoons Schezwan sauce
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Chopped Coriander leaves for garnish (optional)
Instructions:
1. Heat a non-stick skillet or griddle over medium heat.
2. Spread butter evenly on one side of each bread slice.
3. Place the paneer slices on the skillet and cook for 1-2 minutes on each side until lightly golden brown. Remove from heat and set aside.
4. In the same skillet, add a little more butter if needed and sauté the sliced onion and bell pepper until they are soft and slightly caramelized. Season with salt and pepper to taste.
5. Once the vegetables are cooked, add the Schezwan sauce to the skillet and toss with the vegetables until they are evenly coated. Cook for another 1-2 minutes.
6. To assemble the sandwich, place a slice of bread buttered side down on a plate. Arrange a few slices of paneer on the bread, followed by a generous portion of the Schezwan vegetable mixture. Top with another slice of bread, buttered side facing up.
7. Repeat the process to make more sandwiches with the remaining ingredients.
8. Heat a clean skillet or griddle over medium heat. Place the assembled sandwiches on the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
9. Once the sandwiches are cooked, remove them from the skillet and let them cool for a minute.
10. Slice the sandwiches diagonally and garnish with chopped cilantro leaves if desired.
Your delicious Schezwan paneer sandwiches are ready to be served! Enjoy them hot with your favorite dipping sauce or chutney.
