Welcome to my new series where I will try cuisines from different states of India 🇮🇳
Today I am starting with Rajasthani Sev Tamatar ki sabji ❤
Recipe:
-Heat 2-3 tbsp oil
-Add 1 tsp cumin seeds & let these splatter
-Add 1.5 tbsp crushed/minced ginger garlic paste & sauté till golden
-Add 1-2 chopped green chillies & sauté for few seconds
-Add 1 small chopped onion & cook till onions are translucent & brown
-Add 2 big chopped tomatoes, add a pinch of salt, 1/2 tsp turmeric , 1 tsp Kashmiri red chilli powder & cook till tomatoes are mushy
-Take 1/2 cup curd, add 1 tsp turmeric, 1.5 tbsp Kashmiri red chilli powder, 2 tbsp coriander powder & whisk the curd well with all these spices to make it smooth
-Add this curd to the tomatoes at low heat & stir continuously for 1 min
-Adjust salt as per taste
-Now cook all these till the spices starts releasing oil
-Add water as per needed consistency & bring it to a boil
-Add 1 cup Sev (take the thick ones) & switch off the flame
-Add 1 tsp garam masala powder & garnish with fresh coriander leaves
Enjoy with Ghee wali Roti
