S Cookies
Ingredients
2 cups of flour
1 teaspoon of baking powder
Pinch salt
2 eggs
1/2 cup granulated sugar
1/3 cup of olive oil (NOT extra virgin)
1 teaspoon vanilla
Grated lemon zest from one lemon
Directions:
Preheat oven to 350
Whisk flour, baking powder, and salt in a bowl. Set aside.
In a large bowl, whisk eggs and then add sugar.
Add the oil, extract, and zest.
Add flour mixture to wet ingredients. Mix with a spoon.
Take a scoop of dough and roll it out in a 4-inch strand.
Place it into an S shape on a parchment-lined cookie sheet.
Bake for 15 minutes.
When cool, you can add icing and sprinkles.
Icing
Pour some confectioner’s sugar into a cup and add a teaspoon or two of milk until you get the right consistency. Ice with a knife and add sprinkles!
