Here are 3 simple ways you can jazz up your layer cake with “Surprise” Fillings inside!

1. Praline Powder:
Spread out any nut of your choice (You can even use a mix of different nuts if you wish).
Pour caramelised sugar over them and let it set for a couple of minutes
Break into shards and process until a fine powder in a blender
Sprinkle over the buttercream when layering your cake!

2. Citrus Curd:
You could make your own or get store-bought lemon curd! I love experimenting with different citrus fruits like limes, oranges and even peaches and grapefruits!

3. Macerated Fruit:
Maceration is a process where you sprinkle sugar over a fruit and it starts to release its own juices as the sugar starts to melt. What you are left with is a beautiful softened fruit with a natural syrup without any cooking! Works so perfectly well on sponge cakes as the cakes just drink up all that juicy liquid while the softened fruit adds a beautiful flavour and texture to your cake!

Some other fruits you can try macerating include other berries like raspberries and blackberries, cherries, mangoes, peaches and even apples! Just a bonus tip if you are macerating apples - make sure you add a generous squeeze of lemon or lime so the fruit doesn’t oxidise!
