2023.7.18 I made marlin tomato stir-fry and cold tomato soup that I was doing at Masahiro Kasahara's side dish dojo.
【material】
2 slices of marlin fillet
1 tomato
1/2 green onion
1 myoga ginger
appropriate amount of wheat flour
1 tablespoon salad oil
1 tablespoon sake 1/2 tablespoon
appropriate amount of salt
Pepper to taste
1/2 tablespoon vinegar
1/2 tablespoon soy sauce
1/2 tablespoon honey
[How to make]
Marlin cut into 3 cm squares, seasoned with 1 tablespoon of sake, pepper and salt, and left for 10 minutes. Wipe off the moisture, sprinkle with flour, and fry in a frying pan with salad oil until golden brown. After that, stir-fry the slanted scallions and the tomatoes that have been cut and the seeds removed. Add honey, sake, vinegar, soy sauce, and coarsely chopped myoga ginger sauce, and stir-fry to complete.

2023.7.18 笠原将弘のおかず道場でやっていたカジキのトマト炒めとトマトの冷製スープを作りました。
【材料】
カジキ切り身 2切れ
トマト 1個
長ネギ 1/2本
みょうが 1個
小麦粉 適量
サラダ油 大さじ1
酒 大さじ1 大さじ1/2
塩 適量
こしょう 適量
酢 大さじ1/2
醤油 大さじ1/2
はちみつ 大さじ1/2
【作り方】
3㎝角に切ったカジキを、酒大さじ1、こしょう、塩で下味をつけ、10分置きます。水気を拭いて小麦粉をまぶし、サラダ油を熱したフライパンで焼き色が付くまで焼きます。その後斜め薄切りにした長ネギ、カットしてタネ部分を取り除いたトマトを炒めます。はちみつ、酒、酢、醤油、粗みじん切りにしたみょうがを加えたタレを加え、炒めたら完成です。
