I like a mix of cakey and fudgy, I don't like too much fudge texture, but the top has to be a crackle top, and I found out the only way to get that is if the sugar molecules are completely disolved, either by heat or manipulation, but they must be completely disolved

You don't need to use the bain marie to melt the chocolate at all with the Control Freak. Heck, you don't even need it with most induction cooktops.
