Served with a side salad and rice, it’s the perfect quick and tasty feast!

Ingredients
Halibut fillets (or your favorite fish)
10 garlic cloves
2 olives
Half a tomato
1/4 yellow bell pepper
1/4 red bell pepper
1/4 onion
Butter (1-2 tbsp, for cooking garlic)
Flour for dredging
Blackstone Essential Blend Seasoning
Salsa (tomato, onion, garlic, serrano)
Lemon for garnish
Lettuce and tomato salad (optional side)
White rice with veggies (optional side)

Directions
1. Prepare the fish by seasoning the halibut fillets with Blackstone Essential Blend Seasoning, then lightly dredge them in flour.

2. Heat the griddle. Use low heat for the veggies on one burner, medium-high heat for cooking the fish on another, and leave one burner as a warming station.

3. Cook the fish. Add olive oil to the medium-high heat side of the griddle and lay the fillets on it. Drizzle additional olive oil over the fillets. Cook the fish for a few minutes on each side, adding butter to the griddle halfway through cooking.

4. Cook the garlic. On the low heat side of the griddle, melt butter and cook the garlic cloves directly on the griddle until golden and fragrant.

5. Cook the veggies. On the same low heat side, cook the bell peppers, onion, and tomato until softened. Once the veggies are done, mix them with the garlic.

6. Combine and serve. Place half of the garlic and veggie mixture on the plate as a base. Lay the fish fillets on top, then add the remaining garlic and veggies over the fish. Garnish with lemon juice and serve with a side salad and rice.
