All these different species are implemented in random ways. I don't dig into lore that much, I just play the game and read dialogue, but here's a few observations:

Even in Mondstadt where you see several characters/NPCs belonging to a clearly different humanoid species (they have the same features), they only mention things like "Katzlein Bloodline" (Diona, her father Graff etc) but they fully integrate into human society and there isn't much talk of their culture or anything.

Sucrose has animal ears but no one, including herself, knows what species and why. She's not very comfortable with the whole thing and has looked into it but hasn't found answers. She's not Katzlein though.

Klee has elf ears, but no details have been shared as far as I know, although she's from a mother daughter pair of characters/NPCs that exist in the game world. She probably will live as long as her mother who has been around for at least 500 years (a prominent "in the shadows" plot character).

While there are other characters/NPCs like Xilonen, an Ocelot woman, it's the same thing in Natlan as it is in Mondstadt. They just belong to the tribe(s) like everyone else, and that's their culture and background I believe.

Chasca's ears are either a species thing, or, unlikely, they could be from abyssal corruption within her body. Which was the reason she was abandoned as a child and went feral to the point where eating cooked food and wearing clothes was something she disliked, when reintegrating to human society. I suppose living with saurians and "fighting them over scraps of food" does mean her body can process things like raw meat and/or plants humans can't.

And then we have "synthetic humans" like Albedo (and the other "Albedos" whose existence was hinted at during the event/quest Shadows Amidst Snowstorms)...

With 95 playable characters it's no wonder there's a lot of variety now, something for everyone!
