#Chole (Chickpeas Curry)
*Ingredients:*
1 cup chickpeas (chole), soaked overnight
2 onions, finely chopped
2 tomatoes, pureed
2-3 green chilies, slit
1 tbsp ginger-garlic paste
1 tsp cumin seeds
2-3 cloves
1 bay leaf
1-inch cinnamon stick
2-3 cardamom pods
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
1 tsp chole masala (optional)
Salt to taste
Fresh coriander leaves for garnish
2-3 tbsp oil
*Instructions:*
1. Pressure cook the soaked chickpeas with salt and enough water for 4-5 whistles, until they are soft. Drain and keep aside.
2. Heat oil in a pan and add cumin seeds, cloves, bay leaf, cinnamon, and cardamom pods. Saut├й for a few seconds.
3. Add chopped onions and green chilies. Saut├й until the onions turn golden brown.
4. Add ginger-garlic paste and saut├й for another minute.
5. Add the tomato puree and cook until the oil separates from the mixture.
6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
7. Add the cooked chickpeas and mix well. Adjust the consistency by adding water if needed. Let it simmer for 10-15 minutes.
8. Add garam masala and chole masala (if using). Mix well.
9. Garnish with fresh coriander leaves before serving.
Bhature (Fried Bread)
*Ingredients:*
2 cups all-purpose flour (maida)
2 tbsp semolina (sooji/rava)
1 tbsp yogurt (curd)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp sugar
Salt to taste
Water as needed
Oil for deep frying
*Instructions:*
1. In a mixing bowl, combine all-purpose flour, semolina, baking powder, baking soda, sugar, and salt.
2. Add yogurt and mix well. Gradually add water to make a soft dough. Knead well.
3. Cover the dough with a damp cloth and let it rest for 2 hours.
4. After resting, divide the dough into equal-sized balls.
5. Roll each ball into a circle (not too thin or thick) using a rolling pin.
6. Heat oil in a deep frying pan. Once hot, gently slide the rolled dough into the oil.
7. Fry until the bhature puffs up and turns golden brown on both sides.
8. Remove and drain on paper towels.
