Ingredients
•4 Russet Baking Potatoes
•2 large chicken breasts seasoned with salt, pepper, garlic powder, and paprika
•2 tbsp olive oil
•1 tbsp butter
•2 cups freshly shredded mozzarella
•1/2 lb bacon, cooked and chopped
•1/3 cup of ranch
•Fresh parsley or chopped green onions for garnishing
Instructions
1) Preheat oven to 400. Wash your potatoes, then poke them a few times with a fork. Rub them with olive oil and salt. Bake for about an hour (some bigger potatoes may need more time).
2) While potatoes are cooking, set out two large chicken breasts, cut them into bite-sized pieces, and throw them in a bowl with 1 tbsp olive oil and the seasonings listed above. Mix well.
3) Throw your chicken in a hot buttered skillet with 1 tbsp olive oil and cook until golden brown and 165, then set it aside until potatoes are done. You can also use this time to cook your bacon.
4) When your potatoes are done, pull them out and slice them down the middle. You can use your knife to fluff up the insides a bit so the cheese can get in there better. Top each potato with mozzarella, chicken, bacon, and more mozzarella. Bake for another few minutes (400 is fine) until cheese is fully melted.
5) Remove from oven and drizzle each potato with ranch, then garnish with fresh parsley or chopped green onions. Enjoy!
