The guy blocking in that last image looks like he could be wearing a brigandine, which if I understand correctly would have small gaps rather than overlapping plates, or possibly plates of inferior quality/thickness in places. It also could just be instinctual, or even an attempt to grab and control the knife hand rather than block. Or just artistic license.
I do hope we see what these daggers can do against actual replica plate armour though, I'm guessing that with body weight pushing down onto a grounded opponent you could probably push the blade through weaker areas of even decent quality plate.

Agreed! The results were shockingly good considering the metallurgy of the construction and the materials and the way it went through with almost no resistance. Now I'm wondering why these weren't used by Vikings or Romans! Just don't test them on modern body armor or else there will be a UK ban on rondel daggers.

As Matt mentioned, some parts of the plates are flatter than others and/or have ridges or overlap with other pieces, which can provide an easier surface to get a purchase on or to directly brace the dagger in place. While better period armors were likely made of superior material (and sometimes thicker), I think this does make it clear that they could penetrate some plate armor in some circumstances.
