I wouldn’t recommend eating this one raw. I tried it and it wasn’t very good and generally speaking I don’t advise eating any fungi raw.

I was really excited to get to try this fungi-vegetable combo! I took some of the spores from the older ones and scattered them around my yard so if I ever grow sweet corn in the future, I may be able to get my own huitlacoche!

Have you ever seen this fungus before?

I looked up corn smut and let's say I found way too much information. And not about corn fungus.

When he said, "Maybe it will grow on me," I pictured the infection spreading over his skin. Too many horror movies!

huitlacoche! I love it. There are even varieties grown specifically for their extra susceptability to the fungus. (think tempeh, but on the cob)

Okay, you're supposed to mash it and often put it in a tortilla with cheese, the texture and flavor works great in that context

So far I have to say that I really like this channel. The fact that you tried it and didn't particularly like it but didn't immediately dismiss it shows me that you're genuinely curious.

The name mycosarcoma would mean like.. mushroom cancer. Seems about right, and horrifying.

You want the big, firm ones. Once they get that powdery black spores inside, they really aren't good any more. It should actually taste like overly sweet corn, but with a smoother texture. Makes a great taco filling with some chili powder & a bit of cheese.

My father is an indigenous Mexican and we call this huitlacoche! Huitlacoche is my fave and it's great in tacos or tlacoyos. You don't need meat with it imo cause the street vendors make it taste so savory 💕🌸 I hope you come to like it!! :D

You gotta have em on a quesadilla!!! A handmade corn tortilla with some quesillo (Oaxacan cheese) and huitlacoche is all I eat every time I visit 😂

It's really good as a topping on quesadillas. Also it's way more common on corn species native to Mexico (like blue corn) than it is on monoculture sweet corn. It's actually a big issue in Mexico right now: monoculture sweet corn crops are cross-pollinating with and threatening the native species, making huitlacoche less abundant.
