It's really good as a topping on quesadillas. Also it's way more common on corn species native to Mexico (like blue corn) than it is on monoculture sweet corn. It's actually a big issue in Mexico right now: monoculture sweet corn crops are cross-pollinating with and threatening the native species, making huitlacoche less abundant.

I wouldn’t recommend eating this one raw. I tried it and it wasn’t very good and generally speaking I don’t advise eating any fungi raw.
I was really excited to get to try this fungi-vegetable combo! I took some of the spores from the older ones and scattered them around my yard so if I ever grow sweet corn in the future, I may be able to get my own huitlacoche!
