Butternut Squash is one of my favourite seasonal ingredients right now - and IMO there’s no better way to enjoy them than charred, roasted in herbs and spices - and served with a creamy butter bean puree.

Curious how u would cook with soy curls. Not sure if u have it in the UK. But no one seems to have a good solution…it’s hard to get it flavored without overusing so much salt it’s crazy.
