Ingredients:
3 cups of spinach
2 cups of roasted butternut squash, cubed
1 cup of pomegranate seeds
1/2 cup of crumbled feta cheese
1/4 cup of chopped walnuts
1 avocado
3 tablespoons of olive oil
2 tablespoon of balsamic vinegar
2 teaspoon of honey
Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place cubed butternut squash on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 20 minutes, or until squash is tender.
3. In a large bowl, combine spinach, roasted butternut squash, pomegranate seeds, sliced avocado, crumbled feta cheese, and walnuts.
4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
5. Pour dressing over salad and toss to combine.
6. Serve and enjoy!✨
