If you're gonna do it in the oven go down to 220°f and for 8-10 hours depending on weight. Then rest it wrapped for a good hour, not 5 minutes.

And she said you should never rub your seasoning around because you clawed up one area of big chunks and then some areas will be not so much season from a bigger height it will spread evenly
