Ingredients ๐:
300g pasta (your choice: spaghetti, penne, fusilli... etc) ๐
150g prosciutto, sliced into strips ๐ฅ
1 large onion, thinly sliced ๐ง
3 cloves garlic, minced ๐ง
2 tbsp olive oil ๐ซ
1 cup white wine ๐ท (or chicken broth for no alcohol) ๐
2 cups vegetable broth ๐ฒ
1 cup heavy cream ๐ฅ
1 tbsp butter ๐ง
1 tsp dried thyme ๐ฟ
Salt and pepper to taste ๐ง
1/4 cup Parmesan cheese, grated ๐ง
Fresh parsley, chopped ๐ฟ
Red pepper flakes (optional for a little heat) ๐ถ๏ธ
Instructions ๐ณ:
Heat the oil in a large pot or Dutch oven over medium heat. Add the prosciutto ๐ฅ and cook until crispy, about 3-4 minutes. Remove and set aside.
In the same pot, add butter ๐ง and olive oil ๐ซ. Add the onion ๐ง
and cook for 5 minutes until soft and golden brown. Add the garlic ๐ง and sautรฉ for another 30 seconds until fragrant.
Pour in the white wine ๐ท (or chicken broth) and let it reduce for 2-3 minutes.
Add the broth ๐ฒ and bring to a boil. Toss in the pasta ๐, stir well, and reduce heat to a simmer. Cover and cook for 10-12 minutes, or until the pasta is al dente and has absorbed most of the liquid.
Stir in the heavy cream ๐ฅ and thyme ๐ฟ, then let it cook for another 2-3 minutes until the sauce thickens.
Season with salt ๐ง, pepper, and red pepper flakes ๐ถ๏ธ if you like some heat!
Add the crispy prosciutto ๐ฅ back into the pot. Stir in Parmesan ๐ง and fresh parsley ๐ฟ for a burst of flavor!
