Pad thai is my most popular recipe, but I actually make and eat pad mee korat way more than pad thai. Not only because it’s simpler and quicker, it reminds me of my grandma.
Because the sauce is naturally vegan, if you have an eater who is vegan you can easily just separate out a portion for them and add meat to the rest. It also has no peanuts for people with allergies, but you can add it if you’re going for more of a pad thai feel.
