2023.5.30 I made new burdock and natto kakiage and new burdock sweet vinegar that I was doing at Masahiro Kasahara's side dish dojo.

material
1 new burdock root
Saki squid 30g
Ground sesame seeds 1 tablespoon
Ichimi red pepper Appropriate amount
100ml vinegar
100ml water
50g sugar
Light soy sauce 1 tablespoon

how to make
Boil the burdock in water until it becomes soft, pound it with a pestle and cut it into bite-sized pieces. Add burdock root, cut squid, ground sesame seeds, and ichimi to the sweet vinegar mixture of sugar, vinegar, water, and light soy sauce, and let it rest in the refrigerator for about 2 hours.

2023.5.30 笠原将弘のおかず道場でやっていた新ゴボウと納豆のかきあげと新ゴボウの甘酢漬けを作りました。
【新ゴボウの甘酢漬け】
材料
新ゴボウ 1本
さきイカ 30g
すりごま 大さじ1
一味唐辛子 適量
酢 100ml
水 100ml
砂糖 50g
薄口醤油 大さじ1

作り方
ごぼうを水から柔らかくなるまで茹で、すりこぎでたたいて一口大に切る。砂糖、酢、水、薄口醤油、を混ぜた甘酢に、ごぼう、さきイカ、すりごま、一味を入れ、冷蔵庫で2時間ほど寝かせば完成です。
