Healthy Vegan No Meatball Gyro! Oil-Free, Gluten-Free

Recipe:

Veggie Meatballs:

3 cups veggie ground (see my channel)
4 tbsp chickpea flour
1 tbsp ground flax
3 tsp dried sage
3/4 tsp dried thyme
3/4 tsp garlic granules
salt to taste

Preheat oven to 350. Combine and mix your ingredients in a bowl. Divide into 8 portions (for large ones) Roll into balls. Place rolled balls on parchment paper. Bake for 20 minutes.

Tzatziki Sauce:

1 cup raw cashews (soaked for min. 2 hours)
ยฝ- ยพ cups water OR cucumber juice from straining the grated cucumber
1 ยฝ tbls lemon juice
ยฝ tbls apple cider vinegar
2 tbls fresh dill chopped
2 cloves garlic
ยฝ tsp salt OR TO YOUR TASTE
Black pepper to taste
1 European cucumber grated and strained

Combine soaked cashews, lemon juice, apple cider vinegar garlic, salt and pepper and blend until smooth add grated cucumber and chopped dill.

Assemble Gyro by using my soft flat bread recipe (See my channel)
Add tzatziki sauce, veggie meatballs, and fresh tomatoes.

Wrap and enjoy!
