Simple and delicious. I have this at least once a week.

Ingredients:
Chicken thigh, Cut up with skin and bone removed
4 TBS each of diced bell pepper, onion, and celery
4 TBS raw white Basmati rice
1/4 tsp Chicken bouillon
Seasoning to taste(cayenne, black pepper, salt, garlic powder, tarragon)
1/2 C water, more if needed as it cooks
Olive oil
Butter
Green onion tops
Microwave the veggies with a pat of butter for 4 minutes. Add a splash of water if you like as well.
Heat a small amount of olive oil in a non stick pot. Add the chicken and cook for 3 minutes until slightly browned.
Add the veggies and raw Basmati rice.
Add seasoning and Chicken Bouillon.
Cook 2 minutes more.
Add the water and cover and cook on medium low until rice is done.
Basmati rice cooks fast compared to white rice.
It should be done in under 20 minutes total cook time.
