Coincidentally about two weeks ago I had ground beef on hand, so I made Korean beef meant for beef bowls. I doubled the sauce to make sure there was enough, and when I was finished I looked at it and wondered how it would taste with the noodles I had in the cupboard that I was saving for Pad Thai later on. I cooked them and combined them with the beef. It was so delicious that even my picky teenage boys loved it! Turns out I was kind of making this viral noodle dish that I knew nothing about (I’m sure the sauces are different). I should add tofu like you did though!

I'm no expert on east Asian or southeast Asian cuisine, but is this really something new or innovative? There are thousands of sauced noodle dishes in those cuisines, is this really the first time someone thought of mixing the noodles with the sauce and toppings in a bowl instead of in a wok/griddle/pan/pot?
