I do this same thing but I start from frozen. It works great. I'll get some good ribeyes, season them and then vacuum seal them for the freezer. Take one out, 275F in a toaster oven. When the internal temp gets to 115F, pull it out and sear to 130F. Perfect steaks. Also if you're cooking for a crowd, reverse sear is the preferred method.
