I do this same thing but I start from frozen. It works great. I'll get some good ribeyes, season them and then vacuum seal them for the freezer. Take one out, 275F in a toaster oven. When the internal temp gets to 115F, pull it out and sear to 130F. Perfect steaks. Also if you're cooking for a crowd, reverse sear is the preferred method.

I do almost the exact same thing except instead of putting in an oven, I just use sous vide and cook it to temperature. Then the sear doesn't overcook anything

Ghetto Walmarts have Prime beef. Best Ribeyes and NY strips I’ve ever seen. Good indicator that they have some Prime beef is if atleast 65% of the cars are at least 15 years old, and are backed into a parking spot. Don’t make eye contact just get your ass in there and get out!
