A mixologist or a bartender will use many syrups to create different drinks or cocktails. The most popular and easy to make syrups for cocktail making is the simple syrup or sugar water, agave syrup and honey syrup.
🥃Simple Syrup: Made with equal parts water and sugar, simple syrup is the backbone of many cocktails. It’s versatile, dissolves easily, and balances out the acidity in drinks. Try it in classics like the Daiquiri, Mojito, Old fashioned or Whiskey Sour.
🍋🟩Agave Syrup: Derived from the agave plant, this syrup adds a subtle sweetness with a hint of earthiness. It’s perfect for agave-based spirits like tequila and mezcal. Mix up a Margarita, Paloma, or Tequila Sunrise for a taste of Mexico.
🍯Honey Syrup: A natural sweetener with a distinct flavor profile, honey syrup lends depth and complexity to cocktails. It pairs wonderfully with bourbon, rum, and gin. Whip up a Bee’s Knees, Gold Rush, or Hot Toddy for cozy nights in or refreshing sips on sunny afternoons.

Agave nectar mixes well on its own and is called for directly in cocktail recipes like the Oaxaca Old Fashioned. The only reason to make Agave syrup is to cut the sweetness to match with other syrups, for instance to make Dale DeGroff's Triple Syrup.
