If you want to add butter to steak, it's better to add it afterwards just as it gets out og the pan. A pan seared steak is better done with a dry a pan to form the best crust. Also the butter burns and that adds an unpleasant flavor (for most people) to the steak. The sooner the steak sears, the better, assuming you want a medium rare steak with a crisp crust. And if you don't, you shouldn't be allowed to buy a marbled ribeye. It should be illegal, lol. The cauliflower treatment was fabulous.

Looks delicious but here in Australia scotch fillet (ribeye sans bone) has gone from $38 a kilogram to $65 a kilogram, so I'd need a substitution 😒πŸ₯©
