This had the opposite effect for me: When I enable GPU, it not only applies a random material to some mesh, it makes everything sluggish in Edit Mode.

I upgraded to 3.5 and many of my files were not displaying modifiers in the scene, and then I read that if you turn this functionality at the settings to off, then it would return things to normal, which it did. It's too bad my FirePro W8100 doesn't support this new viewport feature. I am here because my modifiers weren't showing in the viewport lol I would love to see this feature someday though, I make large VRC maps and would speed things up I presume.

So the alert in the modifier saying "using both CPU and GPU subdivision" is becouse of this option right?
