Sure. We can also estimate the amount of sugar in grapes through infrared sattelite imagery.

I studied in the field (pun, pun!), so it's not suprising to me hehe, but I still find it strange why it would be surprising that we use available technology.

Bad idea. If it comes to pass that 10 years down the road everyone uses their phones to do this, then another country who wanted to Cripple us economically would trick people into harvesting the grain at the wrong time and could cause a famine. Alternatively, putting the knowledge in the hands of machines could results in the loss of knowledge and skill needed to Harvest Grain without technology
