VEGAN HOTO NOODLE 🍜

Inspired by the hoto noodle I had in Mt Fuji (Check out my VEGAN IN JAPAN 🇯🇵 series on my youtube channel or IG page @bakeyvakey)

Ingredients (1 serving):
2 cups (500ml) water
1 piece dried kelp
3 shiitake mushrooms
1/4 pumpkin, cubed
1 tablespoon miso paste
1/4 tablespoon mushroom seasoning (or salt)
1 serving noodles (knife-shaven noodle or udon)
Cabbage or any other vegetables of your choice

In a pot, combine water, dried kelp, mushrooms, cubed pumpkin, miso paste, and mushroom seasoning. Bring it to a boil over medium heat. Once the pumpkin has softened (~10 minutes), remove the dried kelp from the pot. Add your choice of noodles and vegetables to the pot, and cover with a lid. Allow the noodles to cook while stirring occasionally. Once the noodles are cooked to your liking, remove the pot from heat. Serve hot and enjoy!

Feel free to adjust the seasoning and vegetables according to your taste preferenc
