Dad is from Michoacan and he sells carnitas for party’s and events. His always comes out top tier. He uses slices of oranges instead of lemon or lime like you did. Orange is sweet and gives it a delicious taste at the end

Mexican here, great work, those carnitas looks delicious, some folks add milk and or coca cola to the mix and oranges instead of limes but the point to it is add a touch of acidity, flour tortillas is not common with carnitas specially in more "traditional" locals but they do taste different in my opinion, specially when they are fluffy like those, and that salsa, oh my, really ties the taco together with all the flavors.

Tip from a Mexican: Don’t put oil on your ingredients for the salsa, and if possible, char them in a grill or on a comal instead. You really want that charred roasted flavor

If you use less lard and add broth, once the liquid cooks away and makes the carnitas crunchy - solid alternative
