Stitching your sourdough after you shape it and put it into the proofing basket can help add some extra tension to your loaf before it undergoes its final rise or proof.

I like to wait at least 15 minutes, ideally 20-30, before I stitch up my loaf. Anytime you work with the dough, the glutens tighten up and you need to allow them to relax before you start working with the dough again otherwise it’s very difficult and the dough won’t do what you want it to.

I like to stitch up the middle and then fold in each of the sides in.
