Ingredients:
• 1/4 cup oil
• 3 sliced onions
• 2 tbsp ginger garlic paste
• 750 gms mutton (with some fat)
• 1 & 1/2 tsp yellow chilli powder
• 1 chicken cube
• Khada garam masala: cardamom, cloves, bay leaf, black cardamom, cinnamon, star anise
• 3 tbsp curd
• 2 glasses water
• 2-3 tsp salt
• Basmati rice
• Khare garam masala
• Lemon drops
• 2 tsp biryani masala
• Soaked saffron
Method:
1. Prepare the Yakhni:
• Heat 1/4 cup oil in a pan and sauté 3 sliced onions until golden brown.
• Add 2 tbsp ginger garlic paste and then 750 gms of mutton with some fat.
• Mix in 1 & 1/2 tsp yellow chilli powder and 1 chicken cube.
• Add khada garam masala (cardamom, cloves, bay leaf, black cardamom, cinnamon, star anise) and 3 tbsp curd.
• Mix everything well, then add 2 glasses of water.
• Cook for 45-50 minutes or until the mutton becomes tender. You can also use a pressure cooker for faster results.
2. Par-boil the Rice:
• Boil water with khare garam masala, lemon drops, and 2-3 tsp salt.
• Once it starts boiling, add basmati rice and cook until 75% done.
3. Assemble the Pulao:
• Check the mutton yakhni and remove the mutton pieces.
• Strain the yakhni, then add salt and 2 tsp biryani masala.
• Cook the yakhni for 5 minutes.
• Add the par-boiled rice to the yakhni, mixing gently.
• Sprinkle soaked saffron on top, close the lid, and slow cook for 15 minutes.
