Til Gud is sankrant special receipe and good to eat during winter.
3/4 cup Peanuts
3/4 cup white seasme seeds
1.5 cup grated Jaggery
1.5 Tspn water
3 pinches nutmeg optional
2 pinches cardamom powder optional
1/3 cup Dry grated coconut + for garnishing
Roast peanurs on medium flame for 8-9 minutes stirring continuously till ure able to peel off the skin easily. Once cooled completely using pulse mode grind in blender jar to get coarse texture. I did not remove the skin of peanuts its optional
Roast seasme seeds on medium flame stirring continuously till they start to splutter or are golden brown in colour. it will take 7-8 minutes. (After 5 minutes add dry grated coconut and roast together for further 2-3 minutes).Now transfer or mix roasted sesame seeds- roasted dry coconut with pulsed peanuts in the blender and pulse everything together for 2-3 times giving it a quick stir after each pulse.
Now take a pan add jaggery melt.it on low flame stirring continuously once fully melted add 1.5 tspn water dont skip this and stir it continuously for 1 minute. now add nutmeg powder and ghee. continue stirring it and add.cardamom powder. Note that we do not want one string consistency you have to only melt the jaggery.
Time to add blended or pulsed mixture to jaggery mix it well transfer to greased tray once u level it let it sit for 4 mnts , (do not forget to top it up with grated coconut while u re setting it ) and then cut into squares. Cut it into squares when it is warm
Tips : Melt jaggery on low flame , stirring continuously.
once jaggery melted do not overcook it.
do not skip adding water to jaggery will help to bring the mixture together.
you have to be very quick once u transfer to the tray do not let it cool down. level it when it is hot or warm.
Cut it once rested for 4 minutes.
the roasting time will vary depending on the heat of the burner u re using
