Soup Base:
1 large head of cauliflower, chopped
1 medium yellow onion, finely sliced
1 tbsp smoked paprika (hot or mild)
1/4 tsp freshly grated nutmeg
Lots of salt
100g butter
Melt butter, add onion, paprika, and a bit of salt. Let it cook on medium for about 5 minutes till soft and starting to caramelize.
Add cauliflower and more salt, cover, and cook on medium-high for about 15-20 minutes, stirring occasionally. Once the cauliflower has completely softened, remove the lid and cook 5 minutes longer, until brown but not burned. This is where the flavor of this soup comes from, and also the attractive beige color.
Once the cauliflower is well browned, cover it entirely with water and cook for 10 more minutes. Add nutmeg. Blend till smooth. Serve.
To Serve:
We garnished with paprika butter (as seen on our 'not cilbir' video), toasted almonds, and burnt paprika powder, which we make using dehydrated peels of roasted paprika. You could also use smoked paprika or Isot Biber (sold in Arab supermarkets or on the www).
