It's not pad krapao but one time I made Lo Mein and something was off until I realised...i forgot oyster sauce lol. I don't even like anything sea food and even if I only added a Tbsp it made a big difference.

My favorite local Thai restaurant special made this for me (off menu I asked if they could) and the lady, who is from Thailand asked if I liked it. (Who would say no!?!?) of course I did, and she said they do t use fish sauce in any of their dishes, just oyster sauce. Side note, there was confusion on how spicy I wanted it. I said 4/5 and they brought me full on thai style. I ate it ok, but I could NOT do that every day lol

For the longest time, recipes would often exclude ingredients that might be hard to find. Chinese fried rice and basil fried rice would often just use soy sauce and, maybe, MSG. I spent decades trying to figure out what was missing only to discover it was oyster sauce and fish sauce.
