It's not gas being released nor is the fruit ripening, youre cooking it. Pectin, the fiber found in fruits, breaks down around 217F and ovens get more inconsistent the lower you set the temp. You set the oven to 200, it probably goes up enough to start breaking the pectin down and you pull it out before it turns to mush. Is this softening the fruit? Yeah, and it is a genuinely useful hack if you happen to need soft avocados fast. But I'm feeling pedantic this morning.
