This is my explanation on why Saitama wins.
It was proven by the creator of One Punch Man that when Saitama fights someone more powerful than him, Saitama's power starts to grow exponentially and eventually overpowers his opponent.
Oh, but what about MUI? Well, Goku wouldn't immediately go MUI, we know that he likes to progress the fight through all his forms, meaning Saitama would get the chance to overpower all Goku's forms. If Goku were to go MUI, Saitama can also time travel back in time to prevent that from happening. Not only that, Saitama can copy techniques, we know this since he copied many of Cosmic Garou's special abilities and martial arts, meaning if Goku were to go MUI, Saitama can copy MUI, as well as all his martial arts techniques.
This is why Saitama beats Goku Mid-High Diff
