I prefer to proof my loaves in the refrigerator overnight for 8-24 hours because:

•It gives me more flexibility in my baking schedule
•The loaves are much easier to score
•The longer time results in a longer fermentation and a more rich and complex flavor
•The bread is more digestible and has a lower glycemic index
•It’s much harder to overproof your dough
•It makes for a beautiful, blistered crust
•It will keep longer
