Here's a thought: DON'T level the players up during a campaign. Instead, discuss with them how their character(s) spent their time between campaigns, adjust their character sheets to match, then have them run their newly upgraded, static character in a new campaign where the DM doesn't have to frantically try to keep ahead of the characters' constant power creep. (You can have them spend years training/etc. between campaigns, so they can jump by three/etc. levels between campaigns, if you want.)

Peronaly i would advise boss fights to have bonus effects tword the players, like of damage is delt to them they become immune to that damage type for the remaining and next turn, or if they are hit they do damage but get repelled back. Or give the boss minions that fight along side them. Dont just have a big beefy boi built to take and deal out hits.

Thats why when i run any game i dont use hp i just keep the fight going till either the party is close to death or i feel like the boss should be dead it makes it a lot more tense becuase if the players get to low the feel like the boss was tougher if the kill it easily then they feel strong it blances out but as a dm you dont want it to be a battle of attrition so you still have to have an idea of how long it should take

That’s a hard point, at some point the balance of damage and survivability broke down and I g to or one can’t imagine how to fix it,
