Ingredients:
- 2 cups mixed vegetables (such as capsicum , Cabbage,carrots, broccoli, cauliflower, etc.), diced
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons soy sauce
-Red & Green chili sauce from ching’s
- 1 tablespoon tomato paste or ketchup
- 1 tablespoon chili vinegar from ching’s
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Cooked rice or noodles for serving
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and diced onion to the skillet. Sauté until fragrant and onion is translucent, about 2-3 minutes.
3. Add the mixed vegetables to the skillet. Stir-fry for 5-6 minutes or until the vegetables are tender-crisp.
4. In a small bowl, whisk together soy sauce, Red & Green chili sauce,tomato ketchup , chili vinegar, sugar, salt, and pepper.
5. Pour the sauce mixture over the vegetables in the skillet. Stir well to coat all the vegetables evenly.
6. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the vegetables.
7. Taste and adjust seasoning if needed.
8. Once the vegetables are cooked to your liking and the sauce has thickened, remove the skillet from heat.
9. Serve the mix veg in hot sauce over cooked rice or noodles.
10. Garnish with chopped green onions or sesame seeds if desired.
