I bake daily. I always squeeze my bread and it 'recovers'., unless I failed.
Understanding the basics, you will know that when you squeeze the dough hard, the gluten structure breaks. When you release, the dough returns to its original shape because gluten is elastic, allowing the dough to "recover."
When squeezing fresh bread and it regains its shape, it's due to its inner structure. Air pockets from fermentation and starch provide a springy effect. The starch and gluten form a stable yet flexible network, allowing the bread to "bounce back."
if it doesn't recover, it ain't as fresh or it can be a bad rise of the dough. even poor liquid Vs dry ingredients ratio can be the cause of not bouncing back.
But to be honest. America has lots of poison in their products. Here in Sweden we don't need to worry about it as you do
