Dinners so easy they’re dumb (but delicious): Lazy Enchiladas

This is the kind of weeknight dinner that saves you on the nights you don’t want to cook. It’s budget-friendly, kid-approved, and comes together in one pan with almost no cleanup.

What you’ll need:1 (20 pack) frozen taquitos (chicken or beef)1 (16 oz) can refried beans1 (19 oz) can enchilada sauce1 small can sliced black olives (drained)2 cups shredded cheese (Mexican blend or cheddar)

How to make it:
1. Preheat oven to 400°F.
2. Spread refried beans evenly on the bottom of a 9x13 dish.
3. Add frozen taquitos in a single layer.
4. Pour enchilada sauce and olives over the top.
5. Bake 20 minutes uncovered.
6. Sprinkle cheese and bake another 5–10 minutes until melted and bubbly.

One dish. No chopping. Five minutes to prep.

people don't realize how many foods that come from restaurants are already frozen when they arrive. the only difference in making them taste the same at home is in preparation, like she's doing here. so saying it's as good as a restaurant is actually a perfectly valid claim

To make it actually more Mexican, since enchiladas do come from Mexico, skip the olives, once out of the oven top it with some lettuce, pickled jalapeños, queso fresco and a dollop of sour cream, shredded beef taquitos are yummy.

My mom used to do wolf brand chili in the bottom of the pan, a layer of the frozen burritos that are in the purple package, more chili on top and top it with cheese and black olives.

She baked it and served with sour cream! It was soooo good!
