Cornbread
1 C. Yellow Cornmeal
1 C. All- Purpose Unbleached Flour
2 1/2 t. Baking Powder
1/2 t. Baking Soda
1/2 t. Salt
1/4 C. Granulated Sugar
1 Large Egg beaten
1 C. Buttermilk
1/2 C. (1 stick) Unsalted Butter melted and cooled
8-inch Cast Iron Skillet with little less than a full Tablespoon of vegetable oil in pan. Heat pan/oil on 425 degrees until hot. Add Cornbread batter to hot skillet.
Bake @ 425, 20-25 minutes or until golden brown. Check cornbread at 15 minutes to see how it is baking up. Brush butter on top of cornbread while warm.
