San Mig Light (Beer) Battered Cod with Filipino Escabeche

Ingredients:

6 pcs. (1 pack of Cod)
AP flour to coat and dry the Cod
Green onion for garnish
Oil for deep frying

For Beer Batter:
3/4 cup AP flour
1/4 cup cornstarch
1/2 tsp baking powder
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 bottle San Mig Light (or any beer of choice)

Escabeche Sauce:
3 thumbs of ginger (matchstick cut)
1 red bell pepper (matchstick cut)
10 pcs garlic
1 whole carrot or 1/2 pack pre-cut (matchstick cut)
1 tsp black pepper
120 ml pineapple juice (fresh is best)
1/2 cup brown sugar
1/2 cup vinegar
1/2 cup water
1/2 cup banana ketchup
1 tsp mushroom powder (optional)
cornstarch slurry (equal parts cornstarch and water)

Instructions:
- Pat dry Cod with a paper towel, season with salt and put in the fridge while you make the escabeche sauce
- After making the escabeche sauce, mix all the ingredients of the beer batter (except the beer)
- When you're ready to fry and the oil is hot, remove the fish from the fridge and add the ice cold beer to the beer batter mixture
- Coat the cod with cold AP flour, then to the beer batter, then immediately to the hot oil.
- Immediately after frying, season the fish with more salt. Add the escabeche sauce and top with green onions.
