You can check how sharp a blade is by running the edge LIGHTLY on your fingernail. If it catches slightly then its sharp, if it glides smoothly that means its dull.

The sharpening technique and angle have little to do with it. Its the quality of the steel and not over burdening it that will allow it to last for 20 years.
