Jacob Collier is not improvising here. He picked a cadential 6-4. He picked the pitch they started on. He picked the sections of the audience and how their pitches move. That's performing a composition.
The start of improvisation is when someone does something you don't expect, and the cadence of improvisation is when you do something you don't expect. If you have clear expectations all the way through, then it's throughcomposed, not improvisation.

I like this because it shows a different side to just “Collier is a genius”, he’s taking moments that were special to him with his family and bringing them to his audience.
