I have made this twice this week.. It's top tier... If you're thinking about it, try it!! The kale and sun dried tomatoes are the silent stars of the show... I had mine with Naan.. I am addicted.

This was a true WINNER! I don't really love coconut milk that much, so I used a bit less, but it balanced the spice perfectly. This will definitely be on rotation now in my house!
